Pumpkin Spice Bars

4 eggs
2 c. sugar
1 c. vegetable oil
1 can (15 oz) pumpkin
2 c. flour
2 tsp baking powder
2 1/2 tsp pumpkin pie spice
1 tsp baking soda
1/2 tsp salt

Heat oven to 350. Grease big cookie sheet.  Mix eggs, sugar, oil and pumpkin in large bowl with a spoon.  Stir in flour, baking soda, baking powder, salt, pumpkin pie spice.

Spread batter in pan.  Bake 25-30 min or until toothpick comes out clean.  Cool completely.  Frost with cream cheese frosting.  Store covered in the fridge.

Cream Cheese Frosting

3 oz of cream cheese softened
1/3 c. butter softened
1 tsp vanilla
2 c. powdered sugar

Mix first three ingredients, gradually beat in powdered sugar until smooth.

Peanut Butter Oreo Pie

OREO crust
1/3 cup peanut butter
1/3 of an 8 oz block of cream cheese
1/3 cup powdered sugar
4 oz cool whip
4-serving box of instant chocolate pudding
1 1/2 cups milk

Let cream cheese thaw and mix together with peanut butter, powdered sugar and cool whip until smooth. Pour over Oreo crust.

Make pudding using 1 1/2 cups milk. Pour over peanut butter mixture. Top with extra whipped topping. Grate chocolate candy bar on top. Chill. Store leftovers in fridge (if there are any!).

Taffy Apple Pizza

1 pkg. sugar cookie dough (cook 10-15 min, let cool)
1/4 c. peanut butter
1 8oz pkg cream cheese
1/2 c. brown sugar
1/2 tsp vanilla

combine and spread on top of cookie

then on top arrange
2 med granny smith apples (corked, peeled, thinly sliced) soaked in 1 c. 7-up.

Then sprinke on cinnamon and 1/2 c. nuts.
Finally drizzle on caramel topping

Derby Pie

1/4 lb butter (melted)
1 c. sugar
1/2 c. flour
2 eggs beaten
1 c. chocolate chips
1 c. pecans chopped
1 tsp vanilla

Mix and pour into unbaked pie shell
Bake at 375 for 30 min.
